Flourless Peanut Butter Chocolate Chunk Cookies

I am having computer issues and luckily have my mom's laptop to use in the mean time. Regardless, it looks like it will cause a break from the blog as I try to figure out how to download my pictures. So... here is a recipe I have told a couple people I would send. I got the recipe from my friend Devan (if you are reading... I miss you and your baking :) )

These cookies are really good and I love how easy they are and that they require so few ingredients. They use natural peanut butter as the binder rather than flour. I will type the original recipe but I have started making them with out sugar and they are still really good and have a great texture to them. To replace the sugar I used 1/2 cup Agave and reduced the temperature to 325 degrees.

1 cup organic peanut butter
3/4 cup cane sugar
1 large egg, slightly beaten (or egg replacer)
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dark chocolate, roughly chopped (or dark choc. chips)
  • In a large bowl, stir the peanut butter, sugar, egg, baking soda and salt until combined
  • Stir in the chocolate
  • Scoop the dough in to teaspoon size balls
  • Place on cookie sheet with parchment paper
  • Bake at 350 for about 12-14 minutes

I made these yesterday! They were super yummy. I omitted chocolate and used crunchy organic peanut butter and about 1/3 cup maple syrup for sweetner and they came out so GOOD!!!
